Whoever said "opposites attract" must have been thinking of these Lemon Meringue Bites. The crunchy, sweet meringue nests couldn't be more different than the smooth, tart lemon curd filling. Yet somehow their differences makes the whole candy better. Each bite has a little bit of everything, so there's something here for everyone! I like these candies best when they've sat for an hour or two after assembly. The curd starts to soften the meringue, so it's a little bit chewy, but still crisp along the edges. It's a wonderful combination that will make anyone a believer in the power of opposites.
