I love Florentines. I mean, how could you not love a candy also known as "nut lace"? The name tells you everything you need to know about their strong almond flavor and delicate, lacy texture. They're the perfect combination of crispy and chewy, and I love adding a bit of vanilla and orange zest to mine. They're traditionally served as discs drizzled with chocolate, but they can also be molded into different shapes while they're warm. One of my favorite tricks is to drape them over the bottom of a cup to make an edible "bowl" to hold ice cream or mousse.
